Here is an interesting water level sensor gauge which can light LEDs to show water level.
It should be easy to adapt this idea to the GMC water tank.

Floats could be made with closed cell poly foam instead of the authors use of a 3D printer.

In the readers comments one person suggests that instead of lighting LEDs it could couple a series of resistors so that a
regular water tank (fuel) gauge could read the water level.

A supplier that I use for electronics parts has a float type switch for level indication. I believe it uses a reed switch and also has a thermistor
for temperature indications. You'd have to supply the electronics for the temp reader.
