Sounds like a thermostat issue
If its freezing up, the cooling unit itself if working
Is this an electronic ignition or a pilot light model?

Isn't there some kind of thermocouple that clips to the coils (fins) inside the fridge? It seems to me that Dan Gregg had that same problem with his
Norcold a few years back and it was just a matter of relocating that clip, or it had fallen off, I can't remember which. Maybe you can find it in a
thread search.
