It depends on how far you want to go, but here are some ideas:
1). A 2 by 4 can be hose clamped or screwed to the gas pedal from behind.
The pedal assembly itself is held on with a pivot pin that has a clip on one
side. It comes right off. This improvement usually helps a lot.
2). Most auto parts stores carry accelerator commercially made pedal
extensions. These are becoming more common with a need to get shorter
(vertically challenged) people like me back further from the overpowered
airbags on new cars.
3). Check at your local VA, (veterans administration) they can put you in
touch with a local supplier for handicapped motorist supplies, like this:

further than you wife will let you go, but...
As Billy said, a working cruise makes any trip less tiring.
I've often wished for a block on our accelerator when my wife drives too.
But it would need to be underneath, so she'll slow down!
