Arch,
While looking at your pics, a thought came to me. Dangerous, I know. With
the problems with exhaust manifolds on this engine, I remembered that during
my old hot rodding days, the engine in my '52 Chevy had inserts between the
heads and exhaust manifold. Thin metal tubes, similar to napkin rings.
Seems this would work to help keep from blowing gaskets or even if used
without gaskets to help prevent potential leaks.

Any thoughts, ideas, on this?

The reason you got into the water jacket putting in the insert
seats is because they used big-block Chevbrolet inserts off
the shelf instead of ordering the correct Oldsmobile pieces.
The correct seats are thinner and do not require as deep a
cut into the head. If, in the future, you start to experience
any water loss, you'd best pull the heads and pressure test
them. The metal has to be really thin under the other six
intake seats. Sorry for the negative sound of that.

Arch I knew that you did not have them installed. The point is that many
shops do it that way and we must be on guard by specifying that only these
valve seats will be used.
