Chances are the headliner is deteriorating due to old age and temps. You
may be able to salvage the headliner by taking it down and re-gluing the
materials back to the cardboard. If this doesn't work I'd suggest looking
for some new headliner material with the same hole pattern. When you take
down the headliner be careful of the aluminum trim pieces. I don't think
it's available any more.
Which walls do you have heat damage to? The passenger side dinette area
uses fabric covered cardboard panels, so does the dinette itself. The wall
behind the davo is a laminate material and is installed in two pieces. The
material is attached at the bottom of the wall with sheet metal screws.
They may be hard to see due to rust and poor lighting. To get access to the
driver's side wall you'll need to remove the davo and the seat belts (if
you want to use the old wall as a pattern).
Be aware that what looks like heat damage can also be caused by water. If
this is the case, you'll want to examine the floor very carefully for rot.

Cinnabar has the interior plastic molding - except for the molding that
takes the place of crown molding, and the front window molding. You'll need
to be very careful with that molding since it may be brittle from age.
Be aware that as you replace the plastic trim, the newer pieces will look
white while the remainder will be yellowed.
Lastly, you should start looking for replacement carpeting. The 70s colors
are somewhat back in style now, so it's a good time to start looking. Some
original carpet that I've seen is pretty good, but much of it is of poor
structural integrity - you may find that the carpet rips very easily while
doing other work.
