Did any of the GMCs have a single sink in the galley, or did they all use
the same double sink?

Thanks,

All the GMC-upfitted coaches had a double sink. When my galley was
reimagined by a prior owner, he cut the original sink in half and just used
one basin. It has always been enough for us and gives us more counter
space.

Ron, Make a cover for the cooktop and the large sink, best of 2 scenarios, 2 sinks when/if needed and more countertop.

My objective is a slightly larger single sink that doesn't intrude into
the top drawer space that's between the sink and oven.
Might be an "unobtanium" item.

The chef (AKA "HHIC" Head Honhalso wants to dump the range, install a two
burner cooktop with drawers where the oven used to be.

The current objective is a slightly larger single sink that doesn't
intrude into the drawer space next to the sink.
The "slightly larger" sink is beginning to look like "unobtanium"

The Chef also wants to replace the range with a 2 burner cooktop and
drawers where the oven used to be.

Ron,
Here is a single sink install that replaced the double one from GM:

http://www.gmcmhphotos.com/photos/furnace/p59593-img-20151126-153337.html

It does interfere with objects in the top drawer, and the side and back of the drawer had to be trimmed, but it left enough of the two drawer walls to
keep stuff in the drawer. Got the sink at a yard sale, have seen dozens around in flea markets, swap meets, and mostly yard sales.

It is so nice to actually be able to use the sink for washing more than just 2 hands...I can actually wash my dirty arm or a dish or even a 12 inch
frying pan! I made a new counter that eliminated the stove/oven as you are planning, and just use a portable induction cooktop when the need to cook
arises. Otherwise it is stashed to clear the much larger counter space with that stove and piddly sink gone. The single sink did not take more counter
space but it is deeper, that's why the drawer sides had to be trimmed down.

Look at the available SS sinks from Ikea. I think you might find just what you want. If you do not have a store near you, they do have a web presence
and you can order directly. I installed a sink with basin and a half in place of the OEM sink. Wife very happy with it. Unfortunately, this particular
design has been discontinued. They do have several single bowls that would work. My install did not result in loss of drawers or rebuilding of the
cabinet. I installed in an Avon model.
