You could cut a panel out of piece of luan plywood. It's not the same
finish as the original panels but would work.

Forgot to add that you will also need to mount different lights since the
lamp holder is made of two snap-in pieces that hold the ends of the lamp.
Also, the lamp cover snaps into the plastic as well. I'd suggest a surface
mount cabin light such as used on boats.

The speaker is a rear mounting one - that may give you some clearance
problems since the plastic provides a bit of an inward molding.
