Choke Stove?

Does anyone know if the choke stove that fits into the top of the OEM
intake is still available? I guess I could swap to the electric choke,
but since my crossovers are still open and hopefully I won't need to
pull the heads anytime soon...

You can probably buy the electric choke kit from about any autoparts
store. I bought one from JC Whitney for my CJ7 jeep as the tube from
the choke stove rusted through. It has worked well for several years
and it can be adjusted just like the original choke, by turning the
housing.

NAPA sells a universal choke stove kit, part # 732-1419,
it includes the tube, insulating sleeve, and fittings. I recently installed
one on a '56 T-Bird, ( weirdest Holley carb I've ever seen! ), worked great.

"Inside Out" Holley - I like that!
That's the one! I'm sure an electric choke heater would have been better,
but you know those classic cars - it has to look original!
