Body access doors Hatch latch replacement

I got a set of Applied hatch latches (tri-lobe keyed type). It came with washers, I presume get sandwiched between body and latch. My existing latches (1973) have a filler piece between the body and latch. The washer alone will distort the latch if I rivet it in without supporting the ends, since the washer isn’t as wide as the base, what has anyone else done?

Applied is always happy to help by phone. It makes me a little crazy that they don't include instructions with a lot of their stuff. There's also a section on the Applied site with instructions but the latches aren't listed there.
 
Just in case I'm not understanding correctly...
Are you replacing the entire OEM "latch" (2x front fluid access covers, propane bay, generator bay) or just upgrading to keyed latches of the same type (SouthCo)? If simply upgrading, you don't have to remove the original latches; just pull the spring clip and replace the center "slug".

I do understand supporting our parts/service providers; I have purchased many items from Applied and Sirum. But, charging more than twice the price for those keyed latches? SouthCo still makes them. I bought a set for $8 per latch. $6 per key (bought two keys). Easy swap.

I pulled the part number off of this video and googled for a price. They shipped from WA/OR.

Thanks, I struggled with the back hatch latches, twisted my vintage brownie 6” c clamp trying to press out the pins. The hood latches, I’m going to just replace the fire as you mentioned. I need additional keys, but couldn’t findd them on southco website.
 

57-T-10 is the number for the latch, in case anyone is looking in the future. If Applied included great instructions for implementing these on the GMC that would be one thing, but I'm not interesting in paying extra for nothing.
